I’ve been searching all over Pinterest for an awesome vegan, gluten-free burger. I was inspired to create my own by mixing together the ideas from a bunch I found.

While this was only my first attempt, these were so so very good.

Sweet Potato Lentil Veggie Burgers Prep

I decided to bake instead of fry them, as a healthier alternative, but I’m sure they would have been super delicious that way as well (although completely unnecessary).

Sweet Potato Lentil Veggie Burgers Sandwich

Unfortunately once they were ready I realized I was out of gluten-free buns (I prefer these by Udi’s – though they are not vegan, but dairy-gluten-free)! So I made a sandwich instead (on gf df multigrain bread by KinniKinnick). I topped my burger with my “Cheese” Sauce and avocado slices. YUMM!

Coconut Chocolate Chip Cookies

I have a little obsession. With cookies. I can pass on most desserts, but when cookies are involved… it’s a tough one! Especially chocolate chip cookies. So I started to look around for an awesome recipe, trying different ones out. I came across this recipe from Chocolate Covered Katie and gave it a whirl… yum!

I made some slight adaptations, and here it is!
